TACO FILLED PASTA SHELLS
20 uncooked jumbo pasta shells
1 1/2 lbs. ground beef
1 envelope taco seasoning mix
1 jar salsa, divided
3 oz. cream cheese, cubed
1 cup Mexican blend cheese, shredded
Preheat the oven to 350 degrees.
Cook the pasta according to package directions. Drain and rinse with cold water.
In a large skillet, brown the ground beef until no longer pink and drain.
Stir in taco seasoning mix, 1 cup of salsa and cream cheese. Stir in about 1/4 cup of shredded cheese.
Fill each shell with ground beef mixture and place in a greased baking dish. Top each shell with a drizzle of extra salsa.
Cover with foil and bake for about 20 minutes until heated through.
Sprinkle with the remaining cheese and bake, uncovered, for about 3-5 more minutes until the cheese is melted.
